Homemade Chicken Pie

 

6 T margarine

6 T flour

2 cups chicken broth

1-cup milk

½ t pepper

salt to taste

4 cups cooked chicken – cut in small pieces

2 cups frozen mixed vegetables

1 box refrigerated piecrust – with 2 crusts in box

 

Preheat oven to 425 degrees – melt margarine in a medium saucepan – add flour – cook, stirring constantly for 2 minutes.  Add broth, milk, pepper and salt.  Continue to cook, stirring until thickened and smooth.  Turn off heat.  Roll out first pie curst – using directions on the box.  Lay rolled piecrust in pie pan – put the chicken in first, then the mixed vegetables.  Cover with the sauce – roll out second piecrust and place on top of pie.  Bake @ 425 degrees for 25 to 30 minutes.
