Crawfish-Stuffed Potato

 

6 medium potatoes

4 Tbsp. butter

3 tsp. onion – chopped

1 lb. crawfish tails

½ tsp. light cream

1 tsp. salt

½ tsp. black pepper

½ tsp. cayenne pepper

1 c. cheddar cheese, shredded

½ tsp. paprika

 

Scrub potatoes well.  Dry thoroughly.  Place in oven and bake for 45 minutes or until potatoes can be pierced with a fork.  Melt butter in skillet.  Add onion and crawfish tails.  Cook until done.  Cut potatoes in half. Remove center and whip with electric mixer.  Add crawfish mixture, cream, salt, pepper, and cheese.  Fill potato shells.  Sprinkle top with paprika.  Bake at 425 degrees for 1 hour.
