Carrot Cake

 

2 c. rice flour

2 c. sugar

1 tsp. salt

1 tsp. baking soda

2 tsp cinnamon

1 ¼ c. oil

4 eggs – beaten

3 c. carrots – grated

 

Mix all ingredients above and pour into a 9 x 13-inch pan and bake for 30 minutes @ 350 degrees.
