Alma Finley’s Lemon Tea Cake

 

½ c. margarine

1 c. sugar

2 beaten eggs

1 ½ c. flour

1 tsp. baking powder

½ c. milk

grated rind of one lemon

juice of one lemon dissolved in ¼ c. sugar

 

Cream together margarine and sugar – add beaten eggs – mix well, alternately adding portions of flour, baking powder, milk and grated lemon rind.  Bake in a greased loaf pan at 350 degrees for 40 to 60 minutes (till toothpick inserted in middle comes out clean). Spread lemon and sugar mixture over top of loaf immediately upon removal from oven.
