Pozole

 

1 can ranch style beans (52oz)

1 can hominy (28oz)

1 can crushed tomatoes (28oz)

1 can crushed tomatoes with jalapenos and garlic (15.5oz)

˝ lb. chorizo (pork)

˝ lb. chili grind ground beef

1 bunch cilantro

1 bottle Pace Picante sauce (16oz) choose temp you like

1 medium yellow onion

·        can use fresh tomatoes, 4 or 5 large ones – sauté them with the onions

Peel and chop onion.  Sauté onion in little olive oil. Add the chorizo to onions and cook until it starts to blend with the onions; add ground beef and cook until browned.  Put into a crock-pot that will hold all the ingredients.  Open the cans of beans, hominy (drained), and tomatoes and add to meat mixture.  Add the whole bottle of picante sauce to the pot.  Bring to a high simmer on “High” then turn down and simmer 1 – 2 hours to blend flavors.  Just prior to serving, chop cilantro and mix in.  Serve with saltine crackers, flour tortillas or Indian fry bread.  Can sprinkle grated cheese over top of each bowl.  Serves 8-12.  Easily doubled to tripled, triple for a group of 35 or more.
