Sweet Potato Casserole

 

Casserole:

3 c. mashed sweet potatoes

1 stick butter or oleo

1 tbsp. vanilla

1 c. sugar

2 eggs

 

Topping:

1 c. light brown sugar

1 c. chopped pecans

1/3 c. butter or oleo

1/3 c. flour

 

Pre-heat oven to 350 degrees.  Boil 5 or 6 sweet potatoes to get the amount you need.  Boiling gives them moisture and makes them easier to peel.  Combine all ingredients, pour into a buttered 9 X 13 baking dish.  Combine all topping ingredients and crumble over top of sweet potato mixture.  Bake at 350 degrees for 20 minutes.
