Grilled Red Mountain Trout with Smoked Grape Relish

 

4 trout fillets (skin on)

½ c. red grapes – cut in ½

½ Tbsp. red onion – diced small

½ tsp. liquid smoke flavoring

1 tsp. olive oil

½ Tbsp. green onion – sliced

½ tsp. red pepper – diced

salt & pepper to taste

 

In a mixing bowl – combine all ingredients except trout.  Let set for 15 minutes.  Grill trout fillet until done, then serve with grape relish on top.
