Cajun Breakfast Bread

 

12 eggs – scrambled

2 loaves frozen bread dough

Jalapeno peppers to taste – chopped

1 pound pan sausage

16 ozs. Mozzarella cheese – shredded

16 ozs. Colby cheese – shredded

 

Let dough rise – but not too much.  Scramble 12 eggs and place to the side.  Brown and drain sausage.  On a floured surface – roll out each loaf of bread separately.  In the middle of each – spread one-half of the sausage.  On top of the sausage – spread chopped jalapeno peppers and eggs to taste.  Top with mozzarella then Colby cheese.  Flip each side of dough over and seal ends so that center ingredients are not visible.  Place on greased cookie sheet.  Bake @ 375 degrees until golden brown.  Slice and enjoy.
