Cheese Scalloped Carrots
Ingredients
12 sliced, pared carrots
1/4 c butter or margarine
1 small onion, minced
1/4 c flour
1 tsp salt
1/4 tsp dry mustard
2 c milk
1/8 tsp pepper
1/4 tsp celery seed
1/2 lb grated sharp cheddar cheese
3 c buttered bread crumbs
Directions
Heat oven to 350. Precook carrots; drain. In butter, saute onion 2 to 3 minutes. Stir in flour, salt, mustard, then milk. Cook, stirring untill thick and smooth. Add pepper and celery seed. In 2-quart casserole, arrange layer of carrots, then cheese until both are used, ending with carrots. Pour sauce over top. Spread crumbs ovr top. Bake, uncovered, 25 minutes until golden brown.
