Ingredients
2 large tomatoes
2 medium bell peppers
1 medium onion
2 large cucumbers or 6 pickling cucumbers
1 tsp extra virgin olive oil
salt, pepper to taste
juice from ½ lemon (optional)
1 Tbsp. chopped Italian parsley
1 Tbsp reduced fat feta cheese (optional)
12-3 sliced Greek olives to garnish (optional)
Directions
Dice all vegetables into small cubes. Put in bowl, mix in rest
of ingredients.
Serve chilled. Excellent with warm pita bread. Serves 4.
