Ingredients
3 cups diced cooked ham
4 medium apples peeled and sliced
¼ cup packed brown sugar
¼ tsp. Black pepper
¼ tsp. Ground nutmeg
¼ cup fruit juice or water
½ tsp. Baking powder
1 cup milk
2 tbsp. Melted butter
Directions
Make a layer of ham and apples in a large baking pan. Combine
the sugar, nutmeg and pepper and sprinkle over mixture. Repeat with
the remaining apple-ham-sugar mixture. Pour the fruit juice or water
over the mixture. Cover the pan and bake for about 30 or 40 minutes
or until apples are tender. Blend the flour, baking powder, milk
and melted butter to make a batter. Pour over ham and apple mixture
and bake uncovered, about 20 minutes or until topping is puffed and golden
brown.
