Banana Pudding

 

Ingredients:

5 large bananas

3 eggs, separated

2 ½ c. sweet milk

1 Tbsp. Margarine

3 slightly rounded Tbsp. flour

1 box Vanilla Wafers

1 c. sugar

1 tsp. Watkins vanilla

 

 

Directions:

Beat egg yolks, slightly. Add milk, sugar, flour and butter. Cook over medium heat, stirring constantly until mixture thickens. Add vanilla. Cool slightly. In a large casserole, place in layers wafers, sliced bananas and custard sauce until all are used.

 

Make meringue by beating egg whites until stiff peaks form, gradually add 3 Tbsp. Sugar beating all the while. Spread over pudding bake in oven on lower rack at 400 degrees until brown about 5 minutes. Careful not to burn.

 

Substitute: pineapple for bananas:

Drained, large can crushed pineapple, stir pineapple into pudding mixture. Layer with wafer in casserole.
