Ingredients:
1 lb. lean pork tenderloin
3 Tbsp seasoned bread crumbs
1 Tbsp grated parmesan cheese
1 tsp salt
1/2 tsp pepper
2 tsp vegetable oil
1 small onion, minced
1 clove garlic, chopped
Directions:
Cut loin crosswise into 8 slices - 1 inch thick. Flatten to 1/2
inch. Combine crumbs, cheese salt and pepper. Coat slices.
Heat oil in pan stick pan at medium low heat. Cook with onions and
garlic slowly for 5 minutes. Turn and cook for 4-5 minutes more.
Serves 4.
