Chocolate Eclair Dessert
Ingredients:
1 large box instant vanilla pudding
3¼ cups regular milk, divided
1 (8 ounce) container Cool Whip
1 large box graham crackers
1 cup sugar
1/3 cup cocoa
1 teaspoon vanilla
2 Tablespoons margarine
Directions:
Beat pudding and 3 cups milk together. Set aside
for 5 minutes. Add Cool Whip to pudding mixture and blend. Spray 9 x 13
Pyrex pan with vegetable cooking spray. Line with a layer of separated
graham crackers. Pour half of pudding mixture over crackers. Place another
layer of graham crackers on top of the pudding mixture and pour remaining
mixture over this. Place another layer of graham crackers on top of pudding.
Bring to boil and boil for one minute: sugar, 1/4 cup milk, and cocoa. Remove from heat; add vanilla and margarine. Cool slightly and pour over graham crackers. Refrigerate until ready to serve. Serves 15 to 20
