2 T. onion - grated 2 T. butter 2 c. chicken broth 1/4 c. instant mashed potatoes 1 t. salt 1/4 t. pepper 1 can (1 2/3 C) evaporated milk 1 c. canned pumpkin nutmeg to taste dash of ground ginger
Saute onion lightly in butter in a large sauce pan. Heat to boiling, remove from heat. Whisk in instant potatoes, salt, and pepper till creamy. Whisk in milk and pumpkin. Simmer, stirring often, for 15 minutes. Add nutmeg, about 1/4 t. at a time, to taste. Dash in the ginger. Garnish with a dollop of sour cream or croutons, if desired. Serves 6 as an appetizer. Note: Can add more pumpkin and potatoes for a thicker soup. Great in the fall with a turkey sandwich! Submitted by: Arlene Karnatz
