5 lb. potatoes (Idaho is the best) 1 small can evaporated milk 1 onion - diced 1/2 lb. bacon - diced 1/2 c. water 2 slices white bread 5 eggs 1 stick butter or margarine 1 tbsp. salt pepper to taste sour cream - optional
Dice onion and bacon fine. Saute both with 1/2 cup water until onion is transparent and water has evaporated. Stir melted butter into onion and bacon. Soak bread in the milk until saturated and stir to break it up - set aside. Grate potatoes. Add all ingredients and mix well. Pour into a well greased pan. Bake 10 minutes in 400 degree oven - lower temperature to 350 degrees and continue baking about one hour. Remove from oven when top is golden brown and firm to touch. Serve with sour cream.
