12 oz self-raising flour 1/2 level teasp salt 2 level teasp baking powder 2 level tblsp sugar 3 oz butter 6 fluid oz milk 5 fluid oz cream, freshly whipped Jam or jelly to serve
Whiz the dry ingredients and butter together in a processor. Add the milk gradually while whizzing, working the mixture into a dough. Turn out onto a floured surface and knead lightly until the dough is smooth. Roll out until ½-inch thick then cut out 2-inch rounds using a cutter. Place on a pre-heated baking sheet (very important) and brush tops with milk or beaten egg. Bake at 450~F for 10-12 minutes until well risen and golden. Allow to cool on rack then split and spread with jam and the whipped cream. |
