1-1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. (scant) salt 3/4 c. white sugar 1 orange 1/2 c. orange juice 1/2 c. chopped dates or dried cranberries 1 egg 1/2 c. margarine
Preheat oven to 400 degrees F. Line 12 muffin tins with paper muffin cups. Sift dry ingredients together and set aside. Cut an orange into pieces and remove seeds. Drop pieces into blender and blend until rind is finely ground. Add remaining ingredients to the ground orange. Give it another whirl (my aunt's instructions!).
Pour over dry ingredients and stir lightly. Divide evenly into prepared muffin tins and bake for about 15 minutes. Cool on wire rack. Store in airtight box, and they will keep moist and tasty until they are all gone. I'm told they freeze well, but have never had any left over to test that assertion.
