4 c.diced cooked chicken or turkey
1 c. diced unpeeled red Delicious apple
1 c. chopped pecans
1 (15 1/4 oz.) can pineapple tidbits, drained
1 c. mayonniase
2 tsp. lemon juice
1/2 tsp. curry powder
1 (11 oz.) can mandarin oranges, drained
Combine first 4 ingredients, mix well.
Combine mayonnaise, lemon juice and curry, stir into chicken mixture. Add mandarin oranges and gently toss. Cover and chill. Serve on lettuce leaves. |
