Hwy 18 Beryl, Utah 84714 | Price: | $14.00 | Recipe Sample: | Terry Beef l large Beef Roast, cheaper cuts can be used 1 pkg. Onion Soup Mix 1 tsp- 1 Tbsp Lemon Pepper according to size of roast 1/2 tsp Garlic Powder or more 1 tsp. Paprika Cheese Cloth Freezer Wrap Tin Foil Burlap Trim most of the fat off roast. Mix soup mix, Lemon Pepper, Garlic powder, paprika. Rub mixture all over roast. Wrap roast in Cheese Cloth then wrap in freezer paper sealing all seams with masking tape. Wrap in Tin Foil again sealing all seams. If cooking underground burn oak in pit for several hours to provide enough coals for cooking. Cover coals with sand 1-2 inches thick. When ready to place roasts in pit wet burlap and wrap roasts. Place on sand and cover pit with tin and cover it with sand sealing it so no steam or smoke can escape. Leave for 16(6-8 lb.)-24(10-15lb) hours. Remove carefully from pit and let stand 1/2 hour before opening. Remove from wrappings and place in serving pans. This can be placed in an oven and cooked overnight at 200~-225~ without burlap. |
