Dough: 3 eggs 3 Tbsp. oil 4 c. flour 1 tsp. salt 1 c. water (lukewarm) Mix eggs and oil. Add flour and salt alternately with water until a smooth dough forms. Let rest 15 minutes covered with a dish towel. Divide dough into 3 pieces. Roll thin on a floured kneading board. Cut circles with a cookie cutter. Place a teaspoon of filling in center and fold. Moisten edges with water and press edges together. Make sure edges are sealed. Drop each pierogi into boiling water. Cook until it floats to top. Drain and serve with margarine and fried onion.
Filling: 10 medium potatoes, peeled, and cooked 3/4 lb. Velveeta process cheese or orange cheese Salt and pepper Shred the cheese and mash together with the potatoes. Add salt and pepper to taste. |
