2 tsp. Olive Oil 2 c. Chopped Onions 2 Garlic Cloves, minced 2 15.5 oz cans sliced tomatoes, drained 2 15.5 oz cooked black-eyed peas, drained 4 c. Cook long grain rice 1/3 c. Minced flat leaf parsely 1 Tbsp. plus 1tsp. minced fresh rosemary or thyme leaves 1 tsp. salt freshly ground black pepper to taste 1 lime, pepper sauce and sour cream
In a large nonstick skillet, heat oil and add onions. Cook over medium-high heat, stirring frequently, 5 minutes, until softened. Add Garlic, cook, stirring, 1 minute. Add Tomatoes, cook, stirring frequently, 10 minutes, until slightly thickened. Stire peas, rice, parsley and thyme (or rosemay) into tamote mixture, cook 3 minutes, stirring constantlay, until heated and blended. Serve with lime (cut into wedges), pepper sauce and sour cream. Makes eight 1-cup serving.
