Meat Loaf Muffins
Cooking Spray 1 1/4 lb. Ground beef 1 (1-oz.) pkt. onion soup mix 1/2 c. mesquite-flavored BBQ sauce 1/2 c. precrumbled cheddar cheese 1/4 c. real bacon pieces
Preheat oven to 400 degrees
Spray the cups of a muffin pan(large muffin cup size) with cooking spray; set aside. In large bowl, mix ground beef, onion soup mix, 1/4 cup of the barbecue sauce, the cheddar cheese, and bacon with wet clean hands until well combined.
Shape meat mixture into 6 equal parts; shape into balls. Press in to hte prepared muffin cups. Top muffins with remaining barbecue sauce.
Place muffin pan in preheated oven. Bake for 25 to 30 minutes or until done (160F). Remove from oven. With a knife, loosen edges of meat muffins.
