2 large, homegrown tomatoes
1 c. sharp Cheddar cheese, shredded
1/2 c. sour cream
1/2 c. mayonnaise
2 Tbsp. chives
1/4 tsp. salt
1/8 tsp. pepper
1 pie shell
Slice tomatoes 1/2-inch thick and place on paper towels to soak up moisture. Evenly place 1/2 of the tomatoes in bottom of pie shell. Mix together next six ingredients and spoon 1/2 mixture over tomatoes. Place rest of tomatoes over cheese mix and then spread second 1/2 of mixture on top. Cover exposed edge of crust with foil and bake at 350 degrees until cheese is slightly browned and bubbly. |
