A Little Love Cookbook

3 lbs. ground meat (turkey, beef and/or pork)
3 eggs, lightly beaten
1/2 to 1 C bread crumbs
1 16 oz. can whole berry cranberry sauce
1 16 oz. can jellied cranberry sauce
2 small cans diced green chilies or 1 can green chili salsa
2 bottles chili sauce
In a large mixing bowl, mix meat, eggs, 1/2 c. bread crumbs, half the whole cranberry sauce and 1 can of green chilies (0r 1/2 can of green chili salsa). Mix until just blended, adding more bread crumbs as needed to make proper consistency for rolling.
Brown the meatballs in a large Dutch oven, then gently drain. combine remaining cranberry sauces, chili sauce and chili peppers and add to the browned meatballs. Simmer for an hour and a half over meduim low heat, stirring occasionally. |
