3 egg yolks, beaten
1/3 cups sugar
1/4 cup fresh lime juice
1½ tsp. grated lime rind
1½ cups heavy cream
green food coloring
9-inch graham cracker crust

In top part of boiler, mix egg yolks, sugar, and lime juice. Cook over
boiling water, stirring until thickened but not firm. Stir in lime
rind. Whip 1 cup heavy cream and fold in. Add a few drops of green
coloring. Pile into shell and chill 24 hours. Top with remaining ½ cup
cream, whipped and grated rind if desired.
***You can make it a day ahead because it tastes better if it chills
for a day.
