1/3 c. butter, softened 1/2 tsp. cinnamon 1/4 tsp. baking soda 1 egg 1/2 c. unsweetened applesauce 1 tsp. vanilla extract 1 1/4 c. whole wheat pastry flour 1 1/4 c. rolled oats 1 c. raisins
Preheat oven to 375~F. Grease cookie sheet; set aside. In a large bowl, beat butter until creamy. Add cinnamon and baking soda. Beat until thoroughly combined. Add egg, applesauce, and vanilla. Beat until thoroughly combined. Beat in as much of the flour as you can with the mixer, and stir in remaining flour by hand. Stir in oats and raisins. Drop by rounded teaspoon 2 inches apart onto cookie sheet. Bake 8 to 10 minutes or until edges are light brown. Makes about 30 cookies. |
