8 oz. cream cheese softened to room temperature 16 oz. Cool Whip 1 can sweetened condensed milk 7 oz. coconut ½ stick oleo ½ cup chopped pecans 2 graham cracker pie shells or graham cracker crumbs
Toast the coconut and nuts in oleo until light brown. Cool. Mix cream cheese, Cool Whip, and sweetened condensed milk. Pour into pie shells or into a long pan with graham cracker crumbs in the bottom of the pan. Top with coconut mixture. Drizzle with caramel syrup. Freeze at least 3 hours before serving. It can be frozen longer. Remove from freezer 30-45 minutes before serving. Yields 2 pies.
