 Item ID: | 091057 | Abstract: | CCDC is a community organization and resource that serves young children, 6 weeks to 4 years old, and the families of Anderson, Pickens, and Oconee Counties. We are non-profit and do not receive Federal funding. Instead, we look to the caring hearts of the communities we serve. We serve families of all income levels. We are very proud of our heritage of diversity, and strive to instill that into the hearts of the young ones we care for. This cookbook was made from the friends of Clemson Child Development Center.In creating this cookbook our goal was to present recipes that children would enjoy while tempting them to make healthier food choices. We collected children’s favorites as well as recipes that children could help prepare. We did this because studies show that when children are involved in the harvesting or preparation of food, they are more willing to try them. Whenever possible, we used low fat, fat free, low sodium and low sugar ingredients. We also adapted recipes in order to use more whole grain pastas, whole grain breads, and olive oil. To encourage children to be more adventurous, we offered dips and sauces (to be used in very small amounts) to serve with vegetables, fruits, or low fat meats. Recognizing that presentation plays a big part in making food more appealing, we included recipes that would tempt even the fussiest eater. It cannot be stated too often that the best way to start the day is with a good breakfast. That is why we selected many breakfast dishes that can be made quickly or made earlier and reheated in the morning. You will find recipes that may not fit in the healthy category. These are to be used less often and served in small portions. We recommend that fresh fruit be offered for dessert with sweeter desserts offered occasionally. We hope that you find this cookbook to be a valuable reference for new ideas and inspiration. We enjoyed making it for you. Happy Cooking!

Soften the tortillas by sprinkling lightly with water and microwaving for 1 minute. Cook the sausage in a large skillet. Drain excess fat. Add the spinach and saute until tender. Add the eggs and stir until almost done. Add the cheese, salt and pepper. Cook until the cheese is melted. Divide the scrambled egg mixture evenly among the 6 tortillas, spooning it into the center of each one. Fold up two ends and then fold over the other two sides. Reheat in the microwave 30 seconds. Serve warm with salsa or wrap tightly in plastic wrap and refrigerate for the next day. |
