Ingredients: 1 package (8 oz) egg noodles 1 clove garlic, minced 1.5 lbs lean ground beef 3 cans tomato sauce (8 oz each) 1.5 cup cottage cheese 1 package (8oz) light cream cheese 1/4 cup light sour cream 1/3 cup onion, chopped 1/4 cup green pepper, chopped 1.5 cup cheddar cheese, grated
Method: Cook the noodles according to the directions, drain and fill the pot with cool water so the noodles don't stick. Brown ground beef with garlic, onion and green pepper. Add tomato sauce. Blend the cottage cheese, cream cheese, and sour cream. In a greased 9x13 inch casserole dish, put the cooked noodles and cheese mixture in and mix them together for the bottom layer. For the top layer, add the beef mixture and cover on top with cheddar cheese. Bake in the oven at 350 degrees for 30 minutes. Yields 8 servings and warms up nicely for leftovers.
