1 medium onion, diced olive oil (enough to cook onions) 1/2 lb. bacon or pancetta, cooked and chopped 1 can tomatoes, seeded and diced salt and pepper to taste 1 jar pesto 1 pint light cream 1 handful Parmagiana cheese 1 handful Romano cheese 1 lb. penne pasta Cook onion in olive oil slowly; add chopped bacon and cook slowly. Add tomatoes, salt and pepper. Cook slowly and when almost done, add pesto. Cook 5 to 6 minutes more. Turn off heat and add cream and cheeses. Cook pasta according to package directions. Serve sauce over pasta. |
