In March of 2010, two of our church members, Doug & Nancy Reynics, went to session to seek permission to create a new NDPC cookbook. Once approved, Doug went to the congregation to ask for recipes. He asked our much talented artist, Woody Hickcox, to create the cover art. He asked the Liturgical Writers Group for a prayer of dedication to open the book. 1 eye of round roast A mix of salt (sea or kosher is best), pepper, garlic and dehydrated onions Heat oven to 500 degrees for 20 minutes. Let rest at room temperature while oven is heating. Turn heat down to 450 and place eye of round beef roast in roaster or pan uncovered. Cook in oven for 20 minutes. Turn off heat. Do not open oven door! Let sit in oven for 20 minutes per pound. Perfect. It’s also pretty forgiving, if you leave it in for longer. Note: So easy and so good! Perfect for holidays as it does not require a fuss. Can sit out while other dishes are heated in the oven, if needed. Sarah Erickson
