Recipes including: Indian Fry Bread, Homemade Guacamole Dip, Little Cheddar Meatloaves, Bisque of Crab, Deer Salad, Waldorf Salad, Puerto Rican Sofrito, Chipotle Turkey and Pork Tacos, Empanadas Bolivianas, Fried Rice, Country Style Steak, Chicken & Pastry, Vegan Beanballs, Black Bean & Chicken Chili, Colombian Arepa, Horchata, Moist Banana Pecan Bread and Banana Pudding. Mmmmm! Delicious! 1 cup chopped pecans 1 cup firmly packed light brown sugar 1/3 cup all-purpose flour 1/2 cup (1 stick) butter, softened and divided 1/4 cup sweetened flaked coconut (optional) 2 cans (29 oz. each) sweet potatoes, drained and mashed 3/4 cup granulated sugar 2 eggs 1/2 cup of milk 1 tsp. vanilla extract 1/2 tsp. salt
1. Preheat oven to 350~. Coat a 3-quart casserole dish with nonstick cooking spray. 2. In a medium bowl, combine the pecans, brown sugar, flour, 1/4 cup butter and the coconut, if desired; mix until crumbly, then set aside. 3. In a large bowl, combine the remaining ingredients, including the remaining 1/4 cup of butter; mix well. Spoon into the casserole dish and sprinkle evenly with the pecan mixture. 4.Bake for 45 to 50 minutes or until bubbly and heated through. |
