16 oz crawfish tail meat 1/2 c butter 1/2 c flour 1 c celery, chopped 1 c bell pepper, chopped 2 toes minced garlic 1 c green onion, chopped 6 Tbsp parsley, chopped 1 c water 1 c white wine salt, pepper and Tabasco to taste
Melt butter and add to flour. Stir over low fire until lightly browned. Add celery, garlic, bell pepper, green onion and parsley. Season to taste. Place a lid on pot and simmer over low heat for 15 minutes. Add the crawfish and simmer for 5 more minutes. Serve over steamed rice.
