2 T olive oil 2 C chicken, cooked & cut into 1/2" pieces 1 lb shrimp, peeled & deveined 12 oz chorizo, sliced into 1/2" rounds 1 med onion, chopped 2 cloves garlic, minced 1 1/2 C saffron rice 1/4 paprika 1/4 ground tumeric 1 can (14.5 oz) diced tomatoes 2 cans (14.5 oz ea) low sodium chicken broth coarse salt & ground pepper 1 C frozen green peas, thawed
In a heavy skillet, heat 1 Tablespoon olive oil on medium high heat. Cook shrimp unitl pink on both sides (about 2 minutes on each side-DO NOT OVERCOOK). Transfer to plate & set aside. Add remaining olive oil and chorizo to pan; cook until beginning to brown (2-3 minutes). Add onion, stir unitl soft. Add garlic and rice; stirring to coat & cook rice until soft (approx 2 minutes). Stir in paprika, tumeric, tomatoes, and broth, with wooden spoon to scrape bottom of pan. Season with salt and pepper. Bring to boil and reduce heat to simmer, covered for 20-25 minutes, until rice is done and almost all liquid is absorbed. Stir in chicken and shrimp.
