1 C fresh parsley 1 clove garlic, chopped 4 Tbsp water Juice of 1 lemon Salt and freshly ground black pepper 3 Tbsp flour 6 large Tilapia filets 1/8 C olive oil 3 Tbsp onion, chopped Lemon wedges for garnish
In blender or food processor, combine parsley and garlic, with 2 Tbsp water. Whir until smooth. Thin with additional 2 Tbsp water; mix well. Add lemon juice, salt, pepper to taste. Cover; set aside. On flat plate, combine 2 Tbsp flour with 1/2 tsp salt, and 1/4 tsp black pepper; mix well. Dip filets, coating well, shaking off excess. Heat oil in large skillet; fry fish until browned on both sides. Transfer fish to preheated serving plate; set aside to keep warm. Discard 1/2 the oil; saute onion until golden. Sprinkle in remaining flour over low heat; cook until sauce if light brown, stirring constantly. Add parsley mixture; cook 2-3 min stirring constantly. Pour gravy over fish. Garnish with lemon wedges
