2 Tbls Oil 2 Tbls butter 1 small onion, finely chopped 4 cups butternut squash, peeled and cubed 3/4 cup chopped carrots 1 small green pepper, chopped 1 small tomato, chopped 3 cups vegetable broth 1/2 cream or whole milk salt pepper nutmeg
In a large pot, heat the oil and butter until butter is melted. Add the onion to the pot, and cook until onion is soft. Add squash, carrots, green pepper, and tomato. Season with salt, pepper, and nutmeg, to taste. Pour in vegetable broth. Bring pot to a boil, then lower heat and simmer, covered, for about 45 minutes, or until the squash cubes are easily mushed. Pour all contents into a blender, and blend until liquified. Pour soup back into a pot, whisk in the milk or cream well, and keep hot. Add more nutmeg if desired. Serve hot.
