Bacardi Rum Dark * ½ c. water 1 pkg. vanilla instant pudding Grease the Angel Food or Bunt Cake Pan with butter. Sprinkle 1 cup of either chopped walnuts or pecans in the bottom of the pan. Mix together cake ingredients. Beat together for 2 minutes on Medium speed. Pour batter into the prepared pan. Cook for 1 hour in 325 ° preheated oven. Don’t peek in the oven. When the cake pan is cool (not cold) enough for you to pick up the pan with your hands, use a fork to poke holes in the top of the cake (This will allow the glaze to soak through the cake and into the bottom of the pan). Run a knife around the edges of the pan to loosen the cake from the pan (this helps with the glaze absorption.). You are now ready to prepare the glaze Glaze 1 sticks of butter ¼ c. of water 1 c. of Sugar Mix glaze ingredients together in pan. Boil for 5 minutes stirring constantly. Remove from heat then. Add ½ Bacardi Rum. Stir. Pour glaze evenly over Cake. Let cake cool until you are able to comfortably pick up the pan with your bare hands. Run a knife around the edges of the pan one more time. Turn the cake out onto a plate and you’re ready to serve. *Don’t use 181 proof Rum people tend to get drunk after 2 pieces. Jo Ellen Tarvin |
