2 lb. stew beef 1 1/2 large onions, chopped 1 clove garlic, minced 5 cans (10-oz. each) tomatoes with green chile 1 cup fresh or frozen green (chopped) 5 or 6 potatoes (cut into pieces) 8 carrots (diced) 2 cups water 2 beef bouillon cubes
Brown stew meat in a small amount of oil, add chopped onions and garlic and simmer for 5 minutes. Add remaining ingredients and simmer, covered, for 3 hours or until meat is fork tender. |
