Cookbook Title: COOKING FOR A CAUSE
Item ID: | 15196 | Abstract: | My name is Samantha Raynor and I want to put the spotlight on a rare genetic disorder known as hemihyperplasia. The disorder affects 1 in 86,000 and my daughter, Emily (7 months old) is one of these 86,000. Hemi is a disorder which means there is no cure. Families with a Hemi child will have a bumpy road ahead with several doctor appointments, blood draws, ultrasounds and tumor risks, shoe lifts, leg length correction surgeries, purchasing two different sets of shoes to accommodate foot size difference, just to name a few. Insurance does not cover 100% and sometimes not at all. There is little support for such a rare condition and the charitable organization known as "Lift Up Hemi, Inc" seeks to provide funding to families through private donations. The only way to assist more families is to put the spotlight on this disorder and raise awareness as well as funds. As a group, we are designing and selling a cookbook that compiles recipes from all those who support Hemi awareness. We are planning on selling the cookbook world-wide and using the proceeds to benefit Hemi families with medical bills in the future. | Contact Information: | Samantha Raynor Email: Sikorskish@yahoo.com | Price: | $10.00 | Recipe Sample: | Ingredients Cake: 6 eggs (separated) 2 cups sugar 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon vanilla extract
Cream topping:
1 can evaporated milk 1 can sweetened condensed milk 1 cup whole Milk
Icing: 3 tablespoons water ¾ cup granulated sugar 3 large eggs whites Cherries or Strawberries
Preparation: Preheat the oven to 350 F. Grease and flour a 9x13” backing dish and set aside. In the bowl of a mixer, beat the egg whites on low speed until soft peaks form. Add the sugar gradually with the mixer running and peak to stiff peaks. Add the egg yolks 1 at a time, beating well after the addition of each. Sift together the flour and baking powder and add to the egg mixture. Add the vanilla. Bake until golden, about 25 minutes.
In a blender, combine the evaporate milk, condensed milk and whole milk and blend on high speed. Remove the cake from the oven and while still warm, With a fork poke across the cake, pour the cream mixture over it. Let sit and cool to room temperature. Cover and refrigerate until well chilled or overnight. Once the cake is completed chilled, in a saucepan combine the water and sugar. Bring to boil. Reduce the heat and stir to dissolve the sugar. Cook until the mixture reaches the soft ball stage. While cooking, in a medium bowl, beat the eggs whites to soft peaks. While beating, add the hot syrup in a stream. Beat until all the syrup has been added, the mixture cools and a glossy icing forms. Remove the cake from the refrigerator and spread the icing evenly across the top. Arrange the Cherries or the Strawberry slides over the top and serve. Enjoy!
