INGREDIENTS: 1 cup chopped onions, shallots, red & green bell pepper & celery combined 2 cans whole tomatoes 1 can Rotel diced tomatoes w/green chilies 2 cans whole kernel corn 1 can creamed corn 1/2 lb. piece pickled meat 1 lb. diced smoked sausage 1/2 lb. diced ham chunks 1 lb. peeled & devained shrimp 4-6 potatoes cut into chunks 8-10 mini corn on the cob
COOKING DIRECTIONS: First boil pickled meat until fork tender... Let cool... Then cut into chuncks... Used boiled water from pickled meat as base for soup... Skim foam off top... Add 1 cup chopped seasonings Add 2 cans whole tomatoes Add 1 can Rotel diced tomatoes w/green chilies Add 2 cans whole corn Add pickle meat chunks Add diced smoke sausage Add diced ham chunks Boil these ingredients uncovered for about 45 minutes Add water as needed Add mini corn on the cob and boil for 15 minutes longer Add potatato chunks and boil for 20 minutes longer or until fork tender Add peeled & devained shrimp Add 1 can creamed corn Add granulated garlic, parsley flakes & Tony Chachere's Creole Seasoning to taste Cover and simmer for 20 minutes
