1 large chicken boiled 1 lb. smoked sausage sliced 3 Tbsp. vegetable oil 1 c. green pepper 1 c. onion 1 clove garlic minced 1 Tbsp. salt and pepper ½ tsp. thyme 2 tsp. worcershire sauce 1 quart chicken broth Boil chicken till done, then separate from the bone. Keep juice. Sauté onions and pepper in oil. Add seasonings, broth and tomato sauce. Simmer about 15 minutes. Add meat and rice stir; stir well. Cover and cook over medium heat for about 30 minutes; stirring occasionally to prevent sticking. Cook an additional 20 minutes over low heat without stirring.
