During the 1920's and 1930's "Oil Boom" it was a bustling and thriving town. Today the majority of the residents is elderly, but still has an impact on our young people. Our Seniors are loved and respected for the heritage they continue to give to their families and others in the community. 3 sticks margarine 2 onions - chopped 2 bell peppers - chopped 2 stalks celery - chopped 2 tsp. minced garlic (in jar) 1/2 c. flour parsley 1 lb. shrimp - peeled and cleaned 1 pt. half and half 1 lb. Velveeta cheese 1 lb. fettuccine noodles Parmesan cheese In Dutch Oven, saute margarine, onions, bell peppers, celery and garlic, about 15 minutes until soft. Add flour and saute 15 minutes until golden brown. Pour in one pint half and half. Cut velveeta in chunks and add to pot stirring until melted. Add extra milk if you want it creamier. Cook fettucini noodles according to package directions drain and pour into pot. Add shrimp and mix gently. Top with Parmesan cheese. Bake at 350 degrees until bubbly on sides, about 20 minutes.
