2 lbs. Fish (most any kind will do) 2 c. Mashed Potato 1 c. onion chopped 1 small piece salt pork (4oz or so) 2 tsp. garlic 1 tsp. pepper 1/2 tsp. ground mustard 2 eggs beaten 1/2 c. fish stock oil for frying cakes
Boil fish until cooked and save 1/2 c. fish stock when you drain the fish. Mash the fish with a potato masher. Cut up the salt pork into small pieces and fry slowly with the onions until they are lightly brown. Mix all ingredients together and let cool in the refrigerator for an hour. Form into round flat cakes and fry on a flat grill or hot frying pan with enough oil to keep the cakes from sticking. Cook both sides to a golden brown. This is an old recipe and is reminiscent of the old standard fare of fish and potatoes!! |
