3 c. sliced peaches 1/4 tsp. almond extract 1 tsp. grated lemon peel 3 T. baking powder 1 T. sugar 1/3 c. shortening 1 egg - well beaten 1 c. sugar 1 T. lemon juice 1 1/2 c. sifted enriched flour 1/2 tsp. salt 1/2 c. milk 2 T. sugar
Mix peaches with 1 cup sugar, almond extract lemon juice and lemon peel. Heat in oven, then sift together the flour, baking powder, 1 tablespoon of sugar and salt. Add shortening and cut in until the mixture is like course cornmeal. Add milk and eggs. Mix together. Spread dough over hot peaches. Sprinkle with 2 tablespoons of sugar.
