16 large shrimp, peeled and deveined 1/4 c. olive oil 1 Tbsp. fresh chopped rosemary 1 Tbsp. grated lemon zest 2 tsp minced garlic 1 tsp. coarse-cracked black pepper 1/2 tsp. hot red pepper flakes 1/2 tsp. salt
Mango Salsa: 1 ripe mango, halved, pitted, peeled and cut into 1/2-inch dice 1/2 c. red bell pepper 1/4 c. finely diced red onion 1 jalapeno chile, seeded and minced (1 Tbsp.) 2 Tbsp. fresh cilantro, chopped 2 Tbsp. lime juice 1 Tbsp. honey 1/4 tsp. salt 1/4 pepper You will also need 4 (9-inch) bamboo skewers. Soak skewers in cold water for 1/2 hour. Thread shrimp onto skewer, threading tail to head of shrimp. Place on large plate. In large bowl, whisk oil, rosemary, zest, garlic, black pepper, red pepper, and salt. Rub over shrimp. Marinate 30 minutes in refrigerator, turning once. Mango Salsa: While shrimp is marinating, combine salsa ingredients in a bowl. Let stand at room temperature. Preheat grill. Grill shrimp 2 1/2 to 3 1/2 minutes per side until just cooked through.
