1 can 15 oz tomato sauce 1 c chicken broth (from cooking the chicken) 3/4 c finely chopped onions 4 oz can of diced green chiles 2 tsp salt 1/2 tsp cumin 1/2 tsp oregano 2 c cooked chicken, bite size pieces 3 c cooked rice 1 c sour cream 1 1/2 c crushed crackers 1 c grated cheese
Combine first seven ingredients and cook 10 minutes over low heat. Add chicken and set aside. Combine rice and sour cream and put in large casserole dish. Top the rice mixture with about 1/2 of the cheese. Then top with the chicken/sauce mixture. Put the crackers and remaining cheese on top. Bake at 350~ for 25-30 minutes.
