Glossary for Cooking Terminology |
Oils To reuse oil, skim off all extraneous matter with a skimmer. Then drop a piece of ginger or potato into it and let it fry to absorb all unwanted flavours. Strain while warm through a fine sieve or muslin or a triple layer of cheesecloth. Store in a bottle, and when reusing, mix half old oil and half fresh oil. Canola Oil, Coconut Oil, Corn Oil, Grapeseed Oil (neutral flavour), Peanut Oil (neutral flavour - good for stirfrying), Walnut Oil, Hazelnut Oil, Olive Oil, Sesame Oil , Sesame Oil, Roasted or Toasted , Sunflower Oil (neutral flavour - good for stirfrying)
