Oil, Sesame Sesame oil is made from crushed sesame seeds and is used more as a dressing to add flavour. While it can be added to stirfried dishes, its low burning point makes it unsuitable as a frying medium on its own. It is more usually sprinkled over prepared food, adding a strong nutty flavour. Very aromatic oil, made from roasted sesame seeds, used in Thai recipes that have a Chinese influence. Use it sparingly as a little goes a long way and it has quite a strong, rich flavour. Don't fry with it or use it as the only oil in a salad dressing. The best oil is made from toasted sesame seeds and is dark-coloured and thick with a strong aroma of roasted nuts.
